Gluten-Free Apple Cinnamon Loaf for Fall
October is when the apple baskets show up on the counter, and my kitchen goes into loaf mode. A good apple cinnamon loaf is one of the easiest wins in gluten-free fall baking, because the apples carry the moisture and the cinnamon does the heavy lifting on flavor.
The trick that matters most: use tart apples, the kind that make your mouth pucker, like Granny Smith. Sweet apples fade into the batter and the loaf ends up tasting like plain spice cake. Tart apples hold their flavor through the bake, and little pockets of soft apple keep every slice interesting.
Moisture is the second thing to get right. Gluten-free batters dry out fast, and a loaf pan is unforgiving because the center takes a full hour to set. Grated apple folded into the batter solves most of it. The shreds melt into the crumb and keep it soft for days, with none of the gummy texture that too much xanthan gum gives.
Keep the mixing gentle. Stir until the flour disappears and stop. A cinnamon-sugar swirl through the middle gives you that bakery stripe with no skill involved: pour half the batter, dust it thick with cinnamon sugar, pour the rest, and run a knife through once.
Cool it fully before you slice, even though the smell will test you. Warm gluten-free crumb falls apart; a cooled loaf cuts clean. If you want the full version with exact measurements and the swirl layers, the recipe is here: Gluten-Free Apple Cinnamon Loaf.
