Gluten-Free Pancakes: Fluffy Every Time with This Technique
Fluffy gluten-free pancakes need two things wheat pancakes get for free: structure and lift. Fix both and nobody can tell the difference.
Separate the eggs. Whip the whites to soft peaks and fold them in last. This single step does more for fluffiness than any flour blend. The batter should look airy and almost mousse-like.
Let the batter rest 10 minutes. GF flours hydrate slowly, and the rest prevents grittiness. Buckwheat flour makes especially good pancakes with a nutty, almost malty flavor, and despite the name it contains no wheat.
Keep the griddle at medium, not medium-high. GF pancakes brown faster on the outside while staying wet inside if the heat runs hot. Small pancakes flip more reliably than big ones. Wait for bubbles across the surface before flipping, then give the second side half the time of the first. Serve immediately. GF pancakes firm up as they sit.
These buckwheat pancakes are my weekend standard: gluten-free buckwheat pancakes.
